She doesn’t serve “mocktails”; she creates refined, complex non-alcoholic cocktails, that deliver the same depth of flavour, aroma, and enjoyment as any well-crafted alcoholic serve. She also runs classes that feature functional ingredients and gut health benefits, to offer guests a truly modern and mindful drinking experience.

On the full-strength side, Maria champions local craftsmanship by using spirits from Kent distilleries to keep each class distinctive, with a sense of province and place. She also makes her own seasonal syrups using fruits sourced from local farms wherever possible.
